Description
Mix of cereals (puffed, crunchy and flaked) and honey with dark chocolate and organic chopped almonds.
Alce Nero granola is made from different cereals obtained through different technological processes: the oats are in flakes, the spelt is puffed and the crunchy rice is obtained from rice flour, after a cooking process.
· Oat flakes: they are obtained starting from organic oat grains that are previously cleaned, steamed and finally crushed.
· Puffed farro: obtained thanks to a process of pressure on the farro grain that evaporates the water contained in the farro itself. The evaporation of the water, through pressure, determines the expansion of the grain. This results in a very soft and light product.
· Crispy rice: obtained from organic rice flour that is mixed with water and undergoes a cooking process. The dough then passes through a die that gives the rice its shape. The high cooking pressures and subsequent toasting allow for a very crunchy product.
The different cereals thus obtained are first mixed, without the addition of vegetable oils. In the next phase, a hot mixture composed simply of water and multi-flower honey is poured over them. The resulting dough is then baked in the oven to make the product delicately crumbly. Finally, the 60% dark chocolate flakes and the peeled almonds in pieces are added.
