La salvia cresce nei luoghi aridi e assolati, specialmente nell'Italia Centrale, Meridionale e isole, dal mare alla zona submontana. Si usano le foglie, raccolte da Aprile e Luglio e fatte essiccare. È ben noto come la salvia sia, fin da tempi molto remoti, considerata un ottimo condimento in cucina. Nella pratica erboristica tradizionale, l'infuso usato per gargarismi è ottimo contro il mal di gola e la tonsillite, mentre gli sciacqui possono essere efficaci per le infezioni alle gengive.
