Chickpea (Cicer arietinum L.) is an ancient legume, mainly used in its dry state. The seeds are spherical, more or less large and smooth, generally straw-coloured.Ingredients
Organic chickpea flour.
Instructions for use
Farinata for 4 people: prepare a batter with chickpea flour, 2 tablespoons of olive oil and a little water, until a not-too-dense mixture is obtained; also add a pinch of salt. Pour the batter into the pan and cook for 2 or 3 minutes per side, until the farinata turns golden. Variations: with onion, with courgette flowers or with aromatic herbs, the one with rosemary is typical.
