Il cece (Cicer arietinum L.) è un legume antichissimo, utilizzato principalmente allo stato secco. I semi sono sferici, più o meno grandi e lisci, in genere di colore paglierino.Ingredienti

Modalità d'uso
Farinata per 4 persone: preparare una pastella con la farina di ceci, 2 cucchiai di olio di oliva e un po' d'acqua, fino ad ottenere un composto non troppo denso; aggiungere anche un pizzico di sale. Versare la pastella nella pentola e farla cuocere per 2 o 3 minuti per lato, finché la farinata non avrà assunto un aspetto dorato. Varianti: con la cipolla, coi fiori di zucca o con erbe aromatiche, tipica quella col rosmarino.
