Description
Some Manuka honeys possess an additional activity not due to hydrogen peroxide and which maintains its efficacy in vivo: non-peroxide antibacterial activity. The UMF (Unique Manuka Factor) and IAA (Indice Activitée Antibacterique/Antibacterial Activity Index) indices measure the unique non-peroxide activity of Manuka honey, through laboratory analysis of each batch against activity on an antibiotic-resistant bacterium: golden staphylococcus (Staphylococcus aureus).
Methylglyoxal is one of the molecules responsible for the activity of some types of Manuka honey, but it is not the only one. In fact, there is a synergy of multiple factors that create non-peroxide activity in Manuka honey, and methylglyoxal is only one of them. The MGO level does not guarantee the bactericidal efficacy of honey; it only indicates the content of a substance.
