La radice di cicoria (Cichorium intybus) una volta raccolta, lavata e tagliata, viene torrefatta ad aria calda e quindi macinata. Può essere utilizzata direttamente nella moka riempiendo per metà il filtro o facendola bollire per pochi minuti in acqua e poi filtrare. Si ottiene così una gradevole bevanda calda dal gusto deciso che non contiene sostanze stimolanti.
